I don't know about Animal Kingdom, I finished that park in half a day =/ But they do have great ribs there. Also Epcot has wonderful buildings and exhibits to see. I would check if their fireworks are on display, I don't know if those are a Christmas thing or not. Lastly, YES YES YES to Islands of Adventure!
